Lactalis inaugurates the new production line in Domfront.

The impressive cheese dairy in Domfront (Orne) in picturesque Normandy has the capacity to produce an impressive 40,000 tonnes of cheese per year with the new production line. The ceremony took place in the presence of Emmanuel Besnier, Chairman of the Lactalis Group.

The Domfront cheese dairy is the pride and glory of Lactalis' industrial heritage. The new production line covers 7000 m² and is spread over three buildings. A special highlight is the state-of-the-art ALPMA coagulator. This worldwide unique, continuous curd preparation system for soft cheese is characterised above all by the highest possible yield and quality. The precise preparation and gentle treatment of the curd have always guaranteed the greatest possible process stability and minimal losses. As early as the 1970s, the Besnier family relied on the use of two coagulators, which have now been replaced by this state-of-the-art plant.

With a length of 77 metres and a design of 40,000 litres of milk per hour, the coagulator can produce up to 10 Camemberts per second. This means a production capacity of 540,000 Camemberts per day!!!

During the tour of the premises, Vincent Rojat, plant manager at Domfront, emphasised the versatility of the production facility, which can produce not only Camembert but also other types of soft cheese: "The expansion of the production range will make it possible to significantly increase processing capacity and further advance the company's goals."

The modernisation work, which took almost five years, has proven to be a clear success story. By 2024, the cheese factory will be able to increase its production capacity from the current 25,000 tonnes to 40,000 tonnes per year.
